Why do my stored carrots taste bitter?

Usually this happens when the carrots are exposed to ethylene gas produce from fruit. It is important to never store carrots where you store fruit like apples and pears. The bitter flavor will set in the carrots after about 2 weeks after the exposure to  ethylene gas.
