Carefully dig up the potatoes (their skins are very tender and bruise easily, so be careful). Dry them for 2 to 3 hours on the top of ground. When dry, wipe the dirt off but do not wash.
Store in a warm (85 degrees) dry place for two weeks (This is known as the curing stage). Move them to a cool dry area at a temperature of 50 to 55 degrees. They will keep for 6-8 weeks.
